Tiger Nut Milk
This is something you may not know but the popular tiger nut (Aki awusa) we buy and eat on a daily basis can actually serve as a refreshing drink to sooth the soul. This drink is called the tiger nut milk, actually i recently tasted this drink on my vacation in Portharcourt and i must say the feeling was wow.

Am going to teach you how to make the tiger nut milk, rather than just buying and chewing the nut, you will enjoy it more when you turn it into milk drink, not just for it's nutty milky taste but also for it's health benefits.
Ingredients:
600 soaked tiger nut (475g dry nut)
1.5 liter of water
Coconut
Dates.
We have the fresh and dry tiger nut in Nigeria sold by the Hausa's in the market, i will recommend the dry nut because you will get it same price as the wet or fresh one and when you soak the dry one it will rise giving you more quantity than the fresh one.

Preparations
1.If you are making use of the dry nuts, soak in generous quantity of cold water for three days, and wash daily or you can only soak for a day if you are making use of the fresh one. Also soak the dates in a separate bowl.
2.After the third day of soaking, wash and sort out the bad ones and keep for blending.
3.To blend we start with the coconut, then the dates, before blending the date remove date seeds and blend with the water used in soaking it, then blend the tiger nut.
Note, blending of the tiger nut can be very tricky as it goes bad easily. As soon as the the blending of the tiger nut is over, sieve using chiffon cloth or ladies socks (pantyhose) and it must be a new one thoroughly washed with kitchen liquid soap.
4.Do same for the coconut and date, use 1.5 liter of water to avoid making it too watery. Add more water if you wish
5.Mix the tiger nut with the coconut and date.
6.Put in bottle and store in freezer to chill.
Our tiger nut milk is ready to be served. You can now take it with any snacks of your choice or you can use it as breakfast with bread.
